The whole-food plant-based (WFPB) diet has effectively reversed and prevented cardiovascular disease, type 2 diabetes, and some cancers through research by Dr. Ornish, Dr. Esselstyn, Dr. Barnard, and T. Colin Campbell. "The epidemic of chronic, degenerative disease that is sweeping the western world can not only be stopped but it can also be reversed. The power lies in the hands of the consumer, in the choices we make about what is put on our plates" Dr. T. Colin Campbell. Diet is a modifiable risk factor for chronic, life-threatening diseases. Nurses need a jumpstart on information necessary to help fight this battle of chronic disease flooding our hospitals. The practice of applying knowledge regarding healthy nutrition has benefits beyond the nurse's health. By incorporating a plant-based diet, nurses and patients can lower their risk for cardiovascular disease and other chronic diseases such as obesity, cancer, and diabetes.
My overall objective of Nutrition 4 Nurses is to improve nurses' knowledge based on proven, science-backed research about healthy daily habits, specifically regarding diet, and incorporate more fruits and veggies into their day. The website platform will carry the message and information, including nutrition lectures, cooking classes, recipes, and patient handouts.
We have a crisis of leadership in the public and private institutions, which lacks emphasis on prevention. Due to the lack of trained nutritionists, 89,000 (AND, 2021), educating patients on eating habits that are healthy usually falls on nurses to teach. With over 3.8 million, registered nurses, one of the most significant segments of the U.S. workforce, nurses will play a vital role in nutrition education for the healthcare system (American Association of Colleges for Nursing, 2019).
